  1. Preheat the oven to 375 degrees F. Butter a 9 x 13 baking pan. Set aside.
  2. In a large bowl, combine the diced strawberries with the zest of two oranges, the juice of one orange (about 3 tablespoons), the sugar, and the corn starch. Set aside.
  3. To make the crusts, combine to sugars, baking powder, flour, oats, and salt together by mixing with a whisk.
  4. Beat the egg in a small bowl and add the vanilla.
  5. Add the cold, cubed butter and the egg mixture into the flour mixture. Use a fork, pastry cutter, or your clean hands to mix everything together until it resembles coarse crumbs.
  6. Take half of the mixture and press into the bottom of the prepared baking pan.
  7. Add the strawberry mixture on top of the crust, then sprinkle the remaining crust mixture over the berries.
  8. Bake in the preheated oven for 45-50 minutes until the top is golden brown.
  9. Let the bars cool for at least 20 minutes before cutting them into squares.
  10. Store the cooled bars in an airtight container in the fridge. Rewarm in the microwave if desired.
